Recipe: Thai Green Apple Salad with Lemon Tahini Dressing

Green Apple Salad


4 Green apples, cores removed
One red bell pepper
One red onion
One english cucumber
1 Cup fresh cilantro, chopped
1 Cup roasted cashews, chopped

One cup of sesame tahini
One clove of garlic
Juice from one small lemon
Water, 1/2 cup to 1 cup depending on desired thickness
Sea salt and pepper to taste


For the salad, use a mandolin, or chop by hand, to cut the apples, bell pepper, red onion, and cucumber into match stick pieces and place in a bowl. Add the cilantro and half of the chopped cashews and toss the salad.

For the dressing, place the tahini, garlic, lemon juice, sea salt, pepper, and 1/2 a cup of water in a blender or magic bullet. Blend all ingredients thoroughly. Add more water to adjust the thickness of the sauce.

Pour the dressing on the salad as you serve it and top with some more roasted cashews. This salad pairs great with Thai food, curries, or anything spicy! You can adjust the flavor of the sauce by adding more or less tahini, lemon or garlic, or by adding in cayenne powder. This sauce is also great on rice/quinoa bowls.
