Recipe: Gluten Free Thin Crust Pizza

Gluten Free Vegan Thin Crust Pizza Recipe

Ingredients:

Food For Life brown rice tortillas
Daiya vegan cheddar shreds or your favorite cheese
Gluten free/vegetarian barbecue sauce (I use CattleboyZ BBQ Sauce)
Fresh pineapple diced into cubes
Sliced brown mushrooms
Diced bell pepper
Diced red onion
Banana pepper rings
Vegan Pesto
Any other pizza toppings you prefer

Directions:

Preheat the oven to 375 degrees F. Place the rice tortillas on a baking sheet and place in the oven. After approximately 5 minutes, or when the edges of the tortilla start to get browned and crispy, flip the tortilla over to crisp the other side, approximately 2-3 minutes. the tortilla should now be slightly browned and crispy all over. Apply the BBQ sauce to the top side of the tortilla as the pizza sauce. Spread your Daiya shreds or cheese on the tortilla. Spread the pineapple, mushrooms, red onion, banana pepper rings, and any other toppings your prefer on the tortilla. Apply small dollops of pesto around the tortilla. Once all of the toppings are on stick the pizza back into the oven. Allow the pizza to cook until the cheese is well melted, approximately 8-12 minutes. Remove the pizza from the oven and slice into desired number of slices (I prefer 8). Enjoy the yummy thin crispy crust 🙂

Variations:

Use any type of cheese you prefer if you are not vegan.
Add additional veggies like green onion, artichoke hearts, avocado, black beans, corn kernels, etc.
Add some sliced sausage or chicken if you are not a vegetarian/vegan.
