This recipe is adapted from a salad I first tried at Planet Organic in Victoria.
8 cups of peeled and cubed organic yams (1 inch cubes
1/2 cup of dried cranberries (unsweetened)
1/2 cup chopped pecans (unsalted)
1/2 cup finely chopped celery
1/2 cup diced red onion
1 cup veganaise (or mayonnaise for the nonvegans)
3/4 teaspoon of ginger powder
1/2 tsp black pepper
2 tsp lemon juice
Sea salt to taste
Steam the yams until they are soft(so you can easily poke a fork through them), about 20-25 minutes. Combine all ingredients in a bowl and mix. The more you mix, the more the texture of the yams turns to baby food (as shown in the picture) so be gentle when mixing! Chill before eating. Always taste better the next day once the flavors have mixed.
